    I made apple butter yesterday, and it turned out so good. I used Gala apples, and found I didn’t need to add any sweetener. Should be good on toast with natural peanut butter, don’t you think? This qualifies in my book as Diabetes Friendly as it’s sugar free, home made, and a good substitute for jam and jelly.

    Sugar Free Slow Cooker Apple Butter

     
    Makes 36 – 1 tbsp servings

    4 pounds apples
    1 cup apple cider
    1 teaspoon ground cinnamon
    1 teaspoon ground cloves

    Spray your slow cooker liner with non-stick cooking spray.

    Peel and core the apples, and cut them into large chunks. Pour apple cider over top. Cover the slow cooker and cook on HIGH for 10 hours.

    Mash up the apples, or puree them with an immersion blender. Stir in cinnamon and ground cloves. If you want your apple butter thicker, let cook for another hour on high, or until it reaches the thickness you like.

    Per Serving (1 tablespoon): 31 Calories; trace Fat (4.9% calories from fat); trace Protein; 8g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; trace Sodium.

    Exchanges: 0 Grain(Starch); 1/2 Fruit; 0 Fat.

    Hi, My Husband and I both Love Apple butter ,he is now a Diabettic so I was thinkin about trying this recipe ,I just wish there was a way to cann some of it !! Thank you so much for trying be back to let you know what I think.

    Actually, it is possible to can this apple butter. I’ve done it.

    Wash and sterilize your pint jars. Fill them with the hot apple butter and process in a boiling water bath for 10 minutes, then let cool in a draft-free place.

    You can, of course, can the apple butter in smaller jars, but I’m not sure what the processing time would be.
